Z Baby’s Nana divides her time between two heavenly and tropical Caribbean islands. Hers is a lush world of warm beaches with crystal clear waters and lots of coconuts. Nana shared a few of her island recipes with me this week. You can actually go and stay with Z’s Nana down in Dominica, where she has an off-the-grid farm full of coconuts and other fruits growing called Zephyra’s Wisdom.
Today I’m sharing a recipe for how generations of my husband’s family have made their own coconut milk from real coconuts right off the tree. Coconut milk is high in healthy fats, as well as several key vitamins and minerals. Besides being yummy, it is a great alternative for making drinks, popsicles, and even to lighten up your coffee if dairy doesn’t agree with you or if you’re simply looking to mix things up a bit.
Ingredients:
- 1 coconut
- Filtered Water
How to Prepare:
Make holes in the eyes of the coconut. Drain the liquid and set aside. Crack the coconut, remove the brown husk, and cut the meat of the coconut into 1/2 cubes. This should yield approximately 2 cups of cubed coconut meat.
Mix coconut water with hot filtered water to make a combined total of 2 2/3 cups liquid. Pour into blender {one like this is fine} and add cubed coconut meat. Blend for 30 seconds, then steep for 30 minutes.
Strain through a double thick cheesecloth. You should end up squeezing out about 2 cups of coconut milk.
